quick kidney bean salad

Ingredients
Fresh salad greens(inc. a little parsley and celery leaf)a little grated apple (one half a v. small apple or a couple slices of a regular one)one small finely sliced carrot(I used a peeler to slice mine)1/4 cup of cucumber1/2 a can of kidney beanssprinkle of pumpkin seedsa wedge of lemona squeeze of low fat mayonaise(the greens I used were lettuce, beetroot leaves, spinach leaves, parsley and celery leaves, mostly lettuce and beetroot but whatever you have would work)
Directions
shred leaves, grate or finely slice carrot, cucumber and apple top with seeds and beans and mix in small amount of light mayo then squeeze a wedge of lemon oyver.

this recipe is just for one serving.the kidney beans make it pretty satisfying.
