Pan-Fried Salmon Cakes

Ingredients
2 (5 oz) cans of Salmon, skinless/boneless, drained5 Fat Free Crackers, crushed1 egg (beaten)1 t. Old BayPepper - to tasteFlour - to coat2 T. Extra Virgin Olive Oil1 T. Butter
Directions
1. In a medium bowl, combine first 5 ingredients. Mix well. Form into 3 patties.
2. In a skillet, heat olive oil and butter over medium to medium-high heat.
3. Dredge the patties in the flour to coat.
4. Add patties to the skillet and cook for 3-4 minutes per side (more if you want them a little crispier).

Add a bun or bread to make a sandwich or eat like a crab cake.

Makes 3 patties.
