Brown Rice, medium grain, 1 cupLettuce, red leaf (salad), 1 cup shredded Red Ripe Tomatoes, 1 cup, chopped or sliced Onions, raw, .5 cup, slicedOlive Oil, 4 1tspThyme, fresh, 0.5 tspLemon Juice, 1 lemon yields
Cut tomatoes into thick slices (aprox 4-5 slices per tomato), take the seeds away, add the olive oil and thyme and grill everything till tender. Cut the lettuce roughly with your hands, slice onions then add the grilled tomatoes and mix with the cooked rice.
