Homemade Tomato Sauce

1 Onion, medium 1 T Olive Oil 3 Cloves Garlic, minced (I use a garlic press) 6 Tomatoes, large ½ cup Red Wine 2 Bay Leaves Sea Salt Optional Ingredients: Basil, Thyme, Olives, Mushrooms, Zucchini
Saute onion in olive oil in a medium pot for 5 minutes. Add garlic and cook for 2 minutes. Add tomatoes, wine, bay leaves and salt. Simmer on low for 2 hours or so. Can add a little water if needed. Remove bay leaves. Puree part or all of sauce.

I add chopped mushrooms for a richer flavor. I also used canned tomatoes. This is the one application where canned tomatoes are perfect. - 11/2/18
