Zucchini, 3 cup, sliced ,medium (1/4" thick) Red Ripe Tomatoes, 2 sliced, medium (1/4" thick) 1 oz Parsley, 1 tbsp Olive Oil, 2 tbsp Shredded Mozzarella Cheese, part skim milk,
Layer sliced zucchini, then tomatoes. Sprinkle parsley over layers then drizzle with olive oil. Bake for 35 minutes. Add cheese on top and bake an addinional 10 min.
