Almond-Crusted Chicken Breast

Ingredients
2 boneless-skinless chicken breastsSalt & PepperPinch of cayenne1/4 cup roasted, unsalted almonds1 small garlic clove4 tsp extra-virgin olive oil
Directions
Preheat oven to 425˚F. Season chicken breasts with salt, pepper and cayenne. Place on aluminum foil lined sheet pan.

In a food processor, mini-chopper, or blender make a coarse paste of the almonds, garlic, cayenne and oil. Top each chicken breast with half mixture pressing down slightly to adhere.

Roast for 15 to 18 minutes until cooked through.

Serve with your choice of sides (brown rice, spinach, quinoa, etc).
