Macaroni and Cheese

  • Number of Servings: 1
Ingredients
  • 2 cups uncooked macaroni
  • 8 oz. reduced fat cheese product (like Velveeta Light), cut into cubes
  • 1/2 cup non-fat milk
  • salt and pepper to taste
Directions
1. Cook macaroni as directed by package. Drain and return to sauce pan.



2. Over low heat, add milk, salt, pepper, and cheese to cooked pasta. Stir until cheese is melted and pasta is evenly coated.



Makes 4 servings.

    I have made this many times and the whole family enjoys it. I make it into a one pot meal - I add a vegie mix like carrots, broccoli, etc. - whatever frozen I have on hand and also add some diced ham if I have it. We always use whole wheat pasta and the kids do not seem to notice a difference. - 2/15/09

    Ahhh... in days gone by when I used to be able to eat such high amounts of Sodium this would have been HEAVEN! My addition to the recipe (not low fat though) was to add 1 C Sour Cream to the mix to make it even creamier. Oooh-Ahhh! And if you're feeling wild that day, some Rotel isn't bad either. - 2/15/09

    This was absolutely perfect! However, upon looking at the nutritional info, I thought it was iffy so I put it into the calculator the same way they did, except input the entire recipe instead of by serving (which is what SparkPeople did) and came out with: 325.7 calories, 6.9 fat and 859.6 sodium. - 11/27/10

    IF I make this again I will continue to use the whole wheat pasta but add mexican spices and REAL cheeses versus the velvetta. Velvetta is just weird how when it cools it starts to stick all together and the creaminess is gone. ewww. - 1/31/08

    We like whole wheat pasta with real cheese Cabot 75% low fat and skim milk and the macaroni and cheese is just as good without as much salt. Even the Kraft box has half the sodium in one serving. - 1/28/08
