Savory Spinache Omlette

Ingredients
1 large egg1/2 c. egg whites1 oz. ham, chopped1/4 c. chopped onions1 garlic clove1 c. fresh baby spinach1 wedge light swiss laughing cow cheese2 t. smart balance buttery spread
Directions
Beat egg and egg whites in small dish. In omlette pan, melt 1 teaspoon of butter. Saute onion until translucent and add 1 clove of pressed garlic. After one minute, remove onion and garlic from pan. Add 1 c. of fresh baby spinach to omlette pan and cook until reduced. Add 1 wedge of laughing cow cheese. Mix until creamy. Remove from pan. In omlette pan, melt 1 teaspoon of butter. Pour egg mixture into pan. Cook on one side until amost complete (egg should be mostly cooked through). Flip egg over. Place ham, spinach mixture, onion and garlic on top of cooked side of omlette. Fold omlette in half and serve. Makes 1 serving.
