Ali's "Kind of" Gumbo

Ingredients
Ingredients:Olive Oil, .3 cup Flour, white, .25 cup Celery, raw, 1 cup, diced Onions, raw, .7 cup, chopped Potato, with skin, 2 small (1-3/4" to 2-1/2" dia.), chopped Italian Sausage, pork, 4 link, 5/lb, cooked and sliced Chicken Breast, no skin, 6 ounces, cut into 1 - 2" pcs. Tomato Sauce, 1 cup Chicken stock, home-prepared, 1 cup Zucchini canned with italian style tomatoe sauce, 1.5 cup Spinach, frozen, 1 package (10 oz) yields Parsley, dried, 1 tbsp Garlic, 1 tsp Ditalini pasta, 2 oz. dry
Directions
Makes 8 servings. Add oil to dutch oven and place over medium heat. Add flour, stirring constantly. When it reaches the color you like, add garlic, celery, chopped potato and onion. Saute for 3 - 5 minutes. Add chicken and sausage and saute for 3 - 5 mins. Add remaining ingredients and simmer for 30 minutes. (Add water if too thick)
