8 cups shredded romaine lettuce1 cup frozen peas, thawed2 medium bell peppers (yellow & orange)1 cup halved grape tomatoes1/2 cup chopped baby carrots1/2 coarsely chopped purple onion2 hard boiled eggs and 1 hard boiled egg white5 slices turkey bacon - cooked and crumbled3/4 cup shredded 2% cheese3/4 cup nonfat plain greek yogurt3/4 cup reduced fat mayo1 pkg Truvia2 tsp cider vinegar1/4 tsp salt1/4 tsp garlic powderfreshly ground pepper - to taste
Place lettuce in large bowl. Layer peas, bell pepper, carrots, tomatoes, onions, eggs, bacon and cheese. Mix yogurt, mayo, cider vinegar, sweetener, and seasonings together. Carefully spread over salad to cover and seal. Serve room temperature or chilled. Can cover and refrigerate for up to one day.
