Ingredients
1/2 a salmon fillet 1/2 C. Whole wheat pasta5-6 spears asparagus1 Lemon1 pat butter1-2 T Parmeson cheeseSalt and pepper to taste
Directions
Try to cook everything at about the same time.
Get water boiling for pasta. Cook pasta according to package directions.
Before cooking asparagus, wash and snap off the tough bottom ends.
Boil water for the asparagus. When water is boiling, cook the asparagus for 3-5 minutes, until it is bright green and only slightly tender. Meanwhile, cook the salmon in the microwave by placing the fillet in a microwavable container, covering with water, placing a lid over the container loosely and cooking for about 7 minutes (less if you prefer salmon to be slightly undercooked in the middle). This is a great and easy way to cook salmon. It comes out perfectly and there is less of a fishy smell in the kitchen.
You may want to remove the skin side of the salmon after cooking. It will slide right off.
Squeeze the lemon into a small cup. Remove seeds with a fork or slotted spoon.
Season the salmon and asparagus with salt and pepper.
Place the pasta on the plate. Melt the butter over the hot pasta. Sprinkle with 1/2 of the parmeson.
Place the salmon fillet on top of the pasta. Top with asparagus spears. Pour lemon juice to taste over the whole thing. Top with the rest of the parmeson.
Makes 1 serving. Can easily be adjusted for more people.
