Eggplant with Tomato and Basil

Ingredients
Olive Oil1 Eggplant, peeled and diced1 tsp Salt2-3 Cloves GarlicWaterOlive Oil 3-4 Tomatoes1 jar Capers (about 4 TBSP)Crushed Red Pepper
Directions
Saute eggplant, garlic, salt and olive oil.
Add water as needed to keep from sticking in pan.

Saute diced tomatoes in olive oil.
Add capers and crushed red pepper.
