Ingredients

1/2 cup onion, chopped1/2 cup bell pepper, chopped2 cloves garlic minced1 tbsp olive oil1 - 14.5 oz can chopped tomatoes1 - 4 oz can chopped green chilis1 - 10.5 oz can beef bouillon1 - 10.5 oz can chicken bouillon4 cups vegetable broth1 zucchini, thinly sliced1/2 cup picante sauce3 oz chicken breast , cubed6 corn tortillas cut into 1/2" strips
Saute onion, bell peppers and garlic in oil in large pot until tender. Add remaining ingredients except for tortillas. Bring to a boil; cover, reduce heat and simmer one hour.
Add tortillas and simmer 5 minutes. Or use a small handful of tortilla chips and pour soup over. Also great with a small spoonful of sour cream or Mexican cheese. So simple yet tasty.
