Chicken-Salsa Soup

2 chicken breasts, diced1 cup canned black beans1 cup cooked rice5 cloves roasted garlic1 cup salsa3 cups chicken brothSalt & Pepper
Heat broth or bouillon in soup pot, add diced chicken and bring to a simmer over medium-high heat to cook diced chicken through, approximately 10 minutes. Smash roasted garlic into a paste. Add garlic paste to soup base. Add 1 cup salsa (I put mine in a blender to smooth out texture, can add garlic to salsa in blender as well). Let simmer for 10 minutes. Lower heat to medium/medium low. Add black beans and rice. Heat through, approximately another 10 minutes.
Correct seasoning as you cook with salt & pepper. Try cumin, cayenne, lime juice and other seasonings to taste.
