Rice and Black Bean salad

Ingredients
1 cup(dry) brown basmati rice, Cooked1 can black beans1can whole kernel corn1 chopped red pepper1 bunch cilantro, chopped1 red onion choppedSalt and pepper to taste1/2 c cider vinegar3 T Agave syrup1/4 c oil and 1/4 cup water-can use all oil 1 T lime juice
Directions
Mix rice, beans and vegetables in a bowl. Combine remaining ingredients and whip with fork to blend together. Pour over rice and vegetable mixture and marinate for 3-5 hours before serving. Makes approximately 16 3/4 c. servings

    This is incredibly delicious. I use honey instead of agave syrup, and add extra peppers, but it always goes very quickly in my house. My husband especially likes it, and he generally won't eat anything that doesn't have meat in it! - 10/20/10
