Whole Wheat Waffle

Ingredients
2 c. whole wheat flour (stir before measuring)2 tsp baking powder3/4 tsp salt1/2 tsp ground cinnamon1/8 tsp ground ginger1/8 tsp nutmeg3 eggs separated1 3/4 c nonfat milk1/4 c canola oil
Directions
Combine flour, baking powder, salt and seasonings; stir to mix. Beat egg whties; set aside. Beat egg yolks, add milk and shortening. Add all at once to flour mixture and beat until dry ingredients are moistened.

Fold in egg whites, leaving little fluffs of them showing in batter. Pour into preheated waffle iron; bake until steaming stops or signal light indicates waffle is baked.

Makes 8 (7 inch waffles)
