Turkey Pesto Panini

Ingredients
roasted vegetables (zucchini, peppers, eggplant, etc.), slices lengthwise into 1/4 inch thick strips2 slices of turkey breast1.5 oz shredded Robusto cheesekalamata olives, choppedolive oilfreshly ground peppercrushed garlicmultigrain bread
Directions
Season olive oil with freshly ground black pepper and crushed garlic to coat the veggies. Grill on panini press until tender and moisture escapes.
Spread pesto on one or both sides of the bread. Layer on roasted veggies, chopped olives, shredded cheese and turkey. Grill for 5-7 minutes. (The bread will get nicely crispy if you brush the outsides with olive oil before toasting.)

Makes one large sandwich
