Shrimp stir fry

28-30 medium to large shrimp (peeled)3/4 cup sliced peppers (red, yellow or orange)3 green onions/shallots, cleaned and cut up6 whole cashews (crushed)1/2 red onion1 tsp. fresh garlic2 tbsp. extra virgin olive oil6-8 grape tomatoes, slicedlemon juice from 1/2 lemonsea salt and ground pepper to taste
heat nonstick skillet on medium; add oil and saute peppers and onions for 2 minutes (ala dente')
Add garlic and cook for 1-2 more minutes
add shrimp and saute until pink (about 5 minutes)
add salt & pepper
add cashews
squeeze the juice of 1/2 lemon into dish and stir
cover and let sit for 5-10 minutes to absorb flavors
Can be served on top of salad greens, or tossed into your favorite pasta
