Kathryn Quinoa Breakfast

Ingredients
*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 1 cup (remove)Water, tap, 1 cup (8 fl oz) (remove)Almond Breeze Almond Milk, Unsweetened Original, 8 oz (remove)cinnamon stick, 1 serving (remove)Salt, 1 dash (remove)Pistachio Nuts, .125 cup (remove)Raisins, .125 cup, packed (remove)Honey, 4 tbsp (remove)orange zest, 1 serving (remove)
Directions
1. In a sauce pan bring quinoa, water, milk, cinnamon stick, and a pinch of salt to a boil.
2. Turn heat down to simmer and cook for 15 minutes until quinoa is tender and the germ appears. Add more almond milk if it gets too dry. In the last 5 minutes add the raisins and pistachios.
3. Finish with orange zest, honey and more alomond milk if desired,

    I used toasted sliced almonds in place of the pistachios and added a few extra cinnamon sticks, but otherwise kept to the recipe. Really yummy! I will divide into individual serving containers and take to work for a healthy (& sweet!) afternoon snack. - 3/25/12
