Greg's Raisin Bran Muffins

2.5 cups bran1 1/3 cups whole wheat flour1/4 cup brown sugar1/2 tsp salt2 1/2 tsp baking soda1 cup Thompson raisins2 eggs, slightly beaten1 cup buttermilk1/2 cup vegetable oil1/3 cup molasses1/3 cup honey
Preheat oven to 425 degrees Fahrenheit. Grease muffin tins or use paper liners. Combine the bran, flour, sugar, salt, baking soda and raisins in a large mixing bowl, and stir and toss together with clean hands or a fork (clean hands are the best mixers!). Mix the eggs, buttermilk, oil, molasses and honey together then add into the dry ingredients. Stir until all ingredients are blended. The batter will be quite moist. Using an ice cream scoop, fill each muffin cup 2/3 full. Bake about 15 minutes or until a toothpick inserted in the middle comes out clean. Remove from oven and either cool muffins on a rack for a few minutes before serving or serve cold.
