Ingredients
6 large peeled beets cut into large chunks6 large peeled parsnips sliced thicklyoil to coat roasting pan
Directions
makes 4 2-cup servings. bake at 350 degrees for one hour.

place oil in bottom of roasting pan. add veggies & roll around in oil to coat completely. roast, turning veggies every 15 minutes.
