Porter Chili

1 T. olive oil2 onions, chopped2 bell peppers, cut into 1/2" pieces4 cloves garlic, chopped2 lbs. lean ground turkey1 6 oz. can tomato paste1/4 c. chili powder2 t. ground cumin3 12 oz. bottles dark (or Porter) beer2 19 oz. cans kidney beans, rinsed/drained1 28 oz. can diced tomatoeskosher saltblack pepper
1. Heat oil in large pot over medium-high heat. Add onions, bell peppers, and garlic and cook, stirring occasionally, until soft (6-8 minutes).
2. Add the turkey and cook, breaking it up with a spoon or spatula, until no longer pink (5-7 minutes). Add the tomato paste, chili powder, and cumin and cook, stirring, for 2 minutes.
3. Add beer, beans, tomatoes and their juices, 3/4 teaspoons salt, 1/2 teaspoon pepper. Simmer over medium heat, stirring occasionally, until thickened for approximately 20-25 minutes. Serve with any desired toppings (not included in nutritional calculation).
