Beef Fajitas

Ingredients
1 tablespoon chili powder1/2 teaspoon ground oregano1/2 teaspoon paprika1/4 teaspoon garlic powder1/8 teaspoon salt12 ounces lean beef sirloin, cut into 1/2 " strips1 red onion, cut into strips1 red bell pepper, cut into strips1-2 cups fresh cilantro, finely chopped4 whole-wheat tortillas, 8" diameter1/4 cup shredded cheddar cheese2 cups diced tomatoes2 cups shredded lettuce1/2 cup salsa
Directions
1. In a small bowl, stir together the following:
• chili powder
• oregano
• paprika
• garlic powder
• salt

2. Dredge the sirloin pieces in the seasonings, coating completely.

3. In a nonstick frying pan, cook the sirloin strips over medium heat about 8 minutes, until slightly pink.

4. Add the following:
• onion
• red bell pepper strips

5. Sauté 5 minutes, until the vegetables are tender.

6. Place tortilla on griddle on medium high heat

7. Immediately spoon approximately 2 tbsp of meat and vegetable mixture on tortilla.

8. Sprinkle with 1 tbsp cheddar cheese

9. Fold tortilla with metal tongs (careful not to touch the hot griddle).

10. Grill for 20 seconds, or until tortilla browns.

11. Flip fajita to other side, using tongs. Grill for about 10 seconds.

12. Remove from heat. Repeat steps 6-11 with remaining tortillas

13. Serve immediately with separate bowls of:
• diced tomatoes
• shredded lettuce
• salsa

    I made close to this, but I marinated the meat in olive oil and lemon and lime juice. My seasoning was a little more spicy than this too. - 9/4/07
