Pork Chops with Carmelized Apples

Ingredients
1 tbsp margarine or butter2 granny smith apples, chopped or sliced2 tsp sugar1/4 tsp salt1 tbsp maple syrup1 tbsp balsamic vinegar1/4 cup white wine1/4 tsp ground thyme1/4 cup water2 center cut pork chops
Directions
Place the spread in a medium sauté pan over medium-high heat. As the spread melts add the sliced apples and sugar. Cook stirring occasionally. Allow the apples to brown but not burn. It should take about 20 - 25 minutes to caramelize the apples.

As the apples soften and caramelize add the salt, maple syrup, balsamic vinegar, wine and thyme leaves. Stir gently.

Preheat the oven to 400°F. Place a medium skillet in the oven.

Reduce the heat and allow the apples to simmer for about 10 minutes. Stir occasionally. If there is not enough liquid add water one tablespoon at a time.

As the apples are done spray the hot skillet lightly with oil and add the pork chops. Return the pan to the oven and cook for about 8 - 10 minutes. Remove and turn the pork chops and cook for another 8 - 10 minutes.

Serve with steamed veggies and rice. I love mashed sweet potatoes with this meal.

    For my family-I increased this recipe. I used 3 apples total: 1 granny smith and 2 larger red delicious apples. I also used Pork Sirloin and Light pancake syrup instead of the Center-cut pork chops and my 2.7 lbs made approx 10 - 4oz servings - but the calorie count was only 220 cal. It was great! - 10/18/10
