Beef Enchilada Casserole

Ingredients
1 lb beef1 chopped onion1 can cream of cheddar soup1 grated carrot1 cup chunky salsa2 cups shredded mozzarella cheese, divided in 212 lasagna noodlesOptional - 1 can green chilies
Directions
Brown beef, then add chopped onion and continue to brown. Add soup, carrot, salsa and 1 cup of the mozza cheese and melt together. Either partially cook 12 lasagna noodles or use oven ready type. Layer 4 noodles, 1/3 sauce, and repeat 2 more times. If using oven ready noodles, drizzle with 1 1/3 cup water. Then top with 1 more cup of the shredded mozza. Cover with foil, bake for 50 minutes
