Zucchini Omelet

1 cup diced zucchini3 egg whites 1/4 cup Parmesan cheesecooking spray
Spray small skillet or frying pan with enough cooking spray to keep egg whites from sticking. Add eggs. Allow to cook for about a minute then sprinkle zucchini on half. Allow egg to cook all the way through. Add cheese and fold in half. Continue to cook for another minute or two.
Makes 1 big omelet or 2 small ones. Great with a slice of turkey bacon and toast on the side.
