Mean Black Bean Soup

Ingredients
2 TBS Smart Balance Oil1/2 cup diced onion1/2 cup diced carrot1/2 cup diced celery3 cans black beans1 can Rotel tomatoes1 can diced tomatoes (no salt added)1 can mexi-corn1 TBS dried cilantro
Directions
heat oil in large pot. Add diced vegetables and sautee until softened, about 10 minutes. Add all other ingredients. Bring to a boil, reduce heat and simmer about 20 minutes.

Makes approximately 10 servings, 1 cup each.
