Peanut butter sauce

Ingredients
1 tbsp vegetable oil1 onion, very finely sliced150g/5˝oz crunchy peanut butter100g/3˝oz coconut cream, grated2 limes, juice only2 tbsp soy sauce2 tbsp soft dark brown sugar1 red chilli, finely chopped100ml/3˝fl oz plain yogurt150ml/5˝fl oz chicken stock
Directions
Heat the oil in a frying pan and fry the onion for 4-5 minutes, or until soft. Add the peanut butter, coconut cream, lime juice, soy sauce, sugar and chilli; stir well and cook for a further 3-4 minutes.

Add the cream and stock and bring the mixture to the boil. Reduce the heat and simmer for 10 minutes. (You may need to add a little water to thin the sauce.)
