4 cups watersalt and pepper to taste1 cup stone ground grits3 tbsp butter2 cups cheddar cheese1 lb shrimp , peeled and deveined6 slices bacon4 tsp lemon juice 2 tbsp parsley, chopped 1 cup thinly sliced scallions 1 clove garlic , minced
Bring water to a boil. Add salt, pepper and grits and cook until done, about 20 to 25 minutes. Remove from stove and add butter and cheese. Set aside. Rinse shrimp and pat dry. Fry bacon until browned and drain well . Add shrimp to pan and cook until they turn pink. Add lemon juice, crumbled bacon, parsley, scallions and garlic. Saute for about 3 minutes. Spoon grits into 4 individual plates or bowls and top with shrimp mixture . Serve with your favorite hot sauce.
