Smoky Jalapeno Poppers

8 oz. fat free cream cheese1/2 c. Mozzarella cheese, shredded1/2 c. cheddar cheese, shredded1 tsp. garlic powder (not salt)1 tsp. liquid smoke1/4 c. egg substitute4 slices of bacon, chopped1/4 c. onion, chopped finely1/2 c. mushrooms, choppedsaltine crackers, about 10 squares, crushed
Makes 6 servings. 4 poppers each
Cook bacon, onions and mushrooms in a skillet until the bacon is done...drain and cool.
--Combine cheeses, egg,liquid smoke and garlic. Add cooled bacon mixture.
--Halve the jalapenos. Use a spoon to clean out the seed and veins (best to wear rubber gloves).
--Stuff the pepper halves with the cheese mixture.
--Press the cheese side of the pepper into the cracker crumbs.
Bake at 350 degrees for 30 mnutes.
