Rhode Island Jonnycakes

Ingredients
1 cup yellow corn meal1 cup boiling water1 tsp salt1 tsp sugar1/2 cup milk1 tbsp butter (for frying)
Directions
Mix corn meal, water, salt & sugar until well blended. Let sit for 10 mins.

Add 1/2 cup milk, to make the mixture the consistency of mashed potatoes.

Melt butter in skillet. Drop mixture by spoonfuls to make 2 or 3 inch wide pancakes. Fry each side about 5 to 6 mins, until golden brown.

Makes 8 cakes. You can serve with maple syrup...but I like them plain.
