Flax French Toast

Ingredients
Canola Pan Spray (use spray of your choice)1/4 cup egg substitute, I used the Walmart Brand1/4 cup fat free milk1 TBS ground flax seed (golden is prettier in this recipe but dark will do)2 tsp Splenda granulatedpinch cinnamon to taste (optional)bread of your choice (I used 4 1/2" slices of day old rustic french bread)
Directions
Makes 4 1/2" slices of french bread

Place egg substitute in a shallow bowl, add milk, flax seed, Splenda (adjust to your desired sweetness so add more or less to your choice), and the cinnamon if you are using. Whip to mix with a fork until everthing is incorporated.

Soak your bread slices in the mixture, I like mine pretty wet so I soaked for about 5 minutes, turning over frequently.

Meanwhile spray your frying pan or griddle and heat over medium heat. When pan is hot , place your soaked bread in the pan and pour any left over liquid over each slice. I scraped off the over flowing liquid and turned ot over like a fried egg and served it with the bread.

Serve with honey, maple syrup, or perhaps no sugar added jam.
