Lentils, Brown Rice, and Vegetables

* Lentils, 1 cup (remove) * *Brown Rice, long grain, 1 cup (remove) * Vegetable Broth - Low Sodium, 5 cup (remove) * Curry powder, 1 tbsp (remove) * Onions, raw, 1 cup, chopped (remove) * Garlic, 2 tsp (remove) * Peas, frozen, 0.5 cup (remove) * Mixed Vegetables, frozen (broccoli, cauliflower & carrot) (10 oz) (remove)
Saute onion and garlic in olive oil in 2 quart sauce pan. Saute until tender. Add Curry (also Fenugeek and Graham Marsala if available). Salt and pepper to taste. Add lentils, rice, and broth. Bring to boil, cover, and simmer for 50 minutes. Add frozen vegetables. Cook an additional 5 minutes. Serve in bowls (soupy consistency) with bread and butter.
