2/3 cup flour1/2 cup spelt flour2 tbsp cornstarch1/2 tsp baking powder1/4 tsp cinnamonpinch salt1 tbsp instant espresso powder1 tbsp hot water1/4 cup soymilk1 oz (2 tbsp) shortening2 oz (4 1/2 tbsp) brown sugar2 oz (4 1/2 tbsp) coconut palm sugar2.3 oz (1/2 cup) icing sugar
Preheat oven to 350F, line a 9" pan with parchment or greased foil.
In a medium bowl, combine flours, cornstarch, baking powder, cinnamon and salt. Set aside.
Stir together espresso powder and hot water, then add to the soymilk and set aside.
In a large bowl, cream shortening and all three sugars. Beat in the espresso mixture.
Gently but thoroughly stir in the dry ingredients.
Bake for 18 minutes. Chill before cutting.
