Corn Flakes Chicken

Ingredients
1 1/2 lbs. chicken breast meat (pack of 3 chicken breasts)3 c. Corn Flakes1/3 c. low-fat buttermilk1/3 c. Parmesan cheese1/2 t. black pepper2 T. olive oil
Directions
1. Trim fat off chicken breasts and cut into smaller/thinner pieces about 3 ounces each.

2. In large bowl, measure the Corn Flakes, then crush until you have small crumbs. Stir in Parmesan cheese and pepper.

3. In small bowl, measure the buttermilk.

4. Dip chicken pieces in buttermilk, then roll in Corn Flakes mixture. Put into casserole dish (that has been sprayed with cooking spray.) Drizzle olive oil over the top.

5. Bake 30 minutes at 350 degrees.

Makes 8 servings.

    My kids didn't like this. If we make it again, will cook the 30 minutes at 350 and then broil a few minutes on both sides so it's not so soggy. My son is a chicken mcnugget freak so I'm in search of a healthy, kid-friendly recipe. This wasn't it. - 10/9/10

    I have been making this quick and easy recipe for years and it's been a hit with everyone who's tried it! Instead of dipping the chicken in buttermilk, I dip it in olive oil and leave out the cheese to save some calories, but it's delicious just about any way you make it! - 9/24/10
