Ingredients
Smoked Salmon (lox), 2 oz Asparagus, fresh, 3 spear, large (7-1/4" to 8-1/2") chopped*Extra Virgin Olive Oil, 1 tbsp Onions, raw, .5 medium (2-1/2" dia) 1/4 cup waterSun Dried Tomatoes, .25 cup Egg substitute, liquid (Egg Beaters), .5 cup non fat dry milk, 0.20 cup Marjoram, dried, .25 tsp Pepper, black, 1 dash fat free sour cream(optional)*chives(optional)** not included in nutritional information
Directions
cook asparagus ubtil tender-crisp

add oil onto skillet over medium-low heat, saute onion until soft. add asparagus & sun dried tomatoes. Add smoked salmon and remove from heat.

preheat broiler. combine egg beaters, water, dry milk, marjoram and pepper. pour over salmon mixture. cover & cook over medium-low heat for 7 minutes or until the bottom is set and the top is slightly wet.

Place the skillet under the broiler 4"-6" from the heat source until the top of the frittata is puffed and set, 2-3 minutes. Top with fat free sour cream or chives, if desried.

slice into wedges and serve immediatley.
