1 3/4 cups oat bran3 tsp baking powder2 tbsp sugar1/2 tsp salt 1 cup milk3 tbsp canola oilegg replacer equivalent to 1 egg (1 tsp of egg replacer to 2 tbsp. water)1/4 cup each of walnuts, almonds & pecans ( if you prefer other nuts you can use anything here you want)1/2 cup blueberries(use any fruit you like)Preheat oven to 425 degrees. Mix flour, baking powder, surgar and salt in large bowl. prepare egg replacer and set aside for a minute or two. Add milk to egg replacer and mix well. Add oil to other liquids and blend all liquid ingredients together. Add to dry ingredients and mix until blended. Fold in nuts and blueberries. Add ti muffin tins.
Bake in 425 degree oven for 20 to 25 minutes or until firm and toothpick is clear. allow to cool. Makes 12 regular muffins or 6 large muffins.
