Microwave Frittata

Ingredients
1 ripe tomato1/2 green bell pepper, chopped1 medium eggs, beatena pinch of herbs (basil goes well with tomatoes, for mushrooms try tarragon)
Directions
Makes 1 serving
Chop or slice vegetables.
Place in a large deep microwaveable plate.
Sprinkle very lightly with salt.
Microwave 2'. (If using leftovers or frozen veg, make sure they're heated through thoroughly.) Don't overcook, they will cook some more with the egg.
Pour over beaten egg, add herbs, mix thoroughly in the plate.
Microwave 1' 30". (Adjust time according to your oven and how well set you like them--sometimes I stir them every 30" for a creamier scrambled egg effect.)
Leave to cool a bit, it will set further. Enjoy with freshly ground pepper.
