Apple Oatmeal cookies

1/2 cup country crock with calcium1/2 cup packed brown sugar1/2 cup sugar1/2 tsp. cinnamon1/4 tsp. nutmeg1/4 tsp. ginger1 extra large egg3 medium cortland apples, peeled, cored and diced1 cup flour1/2 tsp. salt1/2 baking soda3/4 old fashioned oats1 cup quick oats
Preheat oven to 375 degrees, Spray cookie sheet with PAM.
Cream together margarine and sugar; stir in cinnanmon, nutmeg, and ginger. Beat in egg. Stir in the apples, then add the flour, salt, and baking soda. Stir until well blended. Add both types of oats. Mix well. Drop by spoonful onto baking sheets.
Bake 12 to 15 minutes, until lightly browned. Let cool one minute before removing to wire rack.
