Shells ala Caprese

Ingredients
8 oz. shell pasta1/2 cup olive oil2 tbsp Balsamic vinegar12 grape tomatoes, quartered4 tbsp fresh basil, chopped4 oz. fresh mozzarella cheese, cut into 1/2 inch cubes1/2 tbsp. kosher salt1/2 tbsp. black pepper
Directions
In large bowl, blend olive oil and balsamic vinegar. Add grape tomatoes, fresh basil, mozzarella cheese cubes, kosher salt, and pepper, blend until coated with olive oil. Cover and refrigerate for 2 hours (optional, allows flavors to blend).

Just before serving, cook shell pasta until al dente, about 11 minutes. Drain. Add pasta to mozzarella mixture. Stir until pasta is coated with olive oil. Serve immediately. Makes 8 1-cup servings.
