Bacon Hotpot

Ingredients
1lb Good Quality Bacon, sliced4 medium potatoes, thinly sliced1 large onion thinly sliced1/2 cup chicken or veg stock
Directions
Alternately layer the bacon, onion and potato in an oven proof dish finishing with a layer of potato. Pour over the stock and cover. Pop in a hot oven (200C or gas 7) for an hour, uncover and cook for a further 30 mins to brown the top.

Serve alone or with lots of fresh veg. Makes 4 portions.
