Coach Nicole's Fresh & Skinny Guacamole

Ingredients
2 ripe avocados, peeled and chopped1/3 medium organic* cucumber, chopped1/3 medium onion, chopped (I use red onion)1 garlic clove, minced1 tsp cumin powder1 squeeze lemon (about 1-2 Tbsp juice)Salt to taste (about 1/2 tsp)
Directions
Add all ingredients to blender or food processor and process to desired consistency. Add salt (about 1/2 tsp) to taste. Serve chilled. Enjoy with your favorite chips or tortillas.

    This is very similar to the low fat recipe I use. I add chopped fresh cilantro (or the paste from the tube) AND I add nonfat plain yogurt. The yogurt cuts the fat per serving and makes the guac more creamy. I add about 1/4 cup to one avocado - 1/7/09

    Tasty! Added garlic and some greek yogurt to reduce fat and used half the salt to keep sodium down. Great! - 6/30/09

    Yum - Loved it. I used lime instead of lemon......and mixed in some fresh tomato salsa I just made too........ awesome! I love the cucumber in it! Definitely will keep making this! - 6/24/09

    I never tried this but on TV, a chef was saying to blanch the avocado for 5 seconds in boiling water, then icy cold water and the avocado won't brown...worth a try!...will keep you posted! - 6/21/09

    Delicious! I didn't have any lemons so I substituted vinegar, apple juice and coriander which thankfully was a perfect substitute. This was my first time eating guacamole and I really liked it. I had homemade pita chips with it, mmmm :) - 11/7/08

    Even with lemon, the guacamole can brown - the fail-safe non browning trick is to cover with ceran wrap and PRESS the wrap right onto the top of the guacamole. I hardly ever use lemon and it never browns when I store it :) - 2/9/09

    I added more garlic, onion and grape tomatoes instead of the cucumber.....delish! I didn't use a blender, but I like my guac chunkier. - 1/15/08

    My family and I loved this. I did add greek yogurt (fat free) as I have started adding to everything I want a little creamier, and it did the trick. I also use this as a spread for hamburgers (turkey burgers) and sandwiches instead of mayo, delicious! - 6/30/10

    I added a seeded diced tomato, a seeded and diced jalepeno pepper, 3 cloves of garlic, and some lime juice as well as the lemon juice, and it was fresh and very tasty! - 8/6/09
