3 cups cucumber, diced30 cherry tomatoes (about 2 cups), halved1 Green Onion stalk (cut with scissors), or about 1 cup diced onion, any typeBasil, 30 leaves (a good handful), cut with scissorsParsley, 1 springs (another good handful), cut with scissors, stalk and all6 tsp Olive Oil (Extra Virgin if you can)1 tbsp Balsamic Vinegarsalt and pepper to taste
The longer you marinate it the better it tastes. If you refrigerate leftovers, let them warm up to room temp slowly (no one wants to see hard clumps of olive oil)
