Spinach and Tofu Lasagna Roll Ups

Ingredients
* *Lasagna Noodles, Skinner, 6.5 oz (remove) * *Pict Sweet All Natural Chopped Spinach (frozen), 3 cup (remove) * *Hunt's Paste (tomato) No salt added, 10 tbsp (remove) * *Extra Firm Tofu, 16 oz (remove) * Mushrooms, fresh, 1 cup, pieces or slices (remove) * Onions, raw, 1 cup, chopped (remove) * *Kraft Natural Cheese Snacks - Mozzarella String Cheese, 4 oz (remove)
Directions
Makes 7 roll ups

Boil lasagna noodles until done. Boil spinach. Cut up onions and mushrooms. Stir fry onions til translucent then add mushrooms and cook til tender. Mix spinach mushrooms and onions in a bowl with the tomato paste. Coat 9x9 pan with olive oil. Break the sting cheeses into halves. Each roll up takes 1/2 a string cheese. lay out noodles when done and peal each half of string cheese and place on noodle. Smear spinach mixture over the cheese. Place a few pieces of tofu on the spinach. Roll up lasagna noodle and place in pan. Repeat for the rest of the noodles. Bake on 350 for 40 minutes.
