White Bean and Vegetable Gratin

Ingredients
For casserole:2.5 cups green beans, trimmed and cut4 tomatoes, chopped1 red onion1 yellow pepper1/2 green pepper3 cans white beans (I used cannelini beans)olive oilthymesaltpepper2 jalapenos, optionalfor topping:2 cups seasoned breadcrumbsolive oil
Directions
Steam or microwave green beans until crunchy-crisp, about 5 minutes. Combine casserole ingredients in a large bowl. Pour into casserole dish. Combine topping ingredients in small bowl and spread evenly over top of casserole.

Cover with foil and bake for 30 minutes. Remove foil and bake for another 30 minutes.
