Basic Banana Tofu Muffins

Ingredients
1 cup skim milk1 tsp vinegar1 cup rolled oats3 bananas1/2 block soft tofu1 egg1 tsp canola oil1/4 cup applesauce1/2 tsp vanila1 cup whole wheat flour2 tbl flaxseed meal1 tsp baking powder1/2 tsp baking soda1/2 tsp salt1/2 tsp cinnamon
Directions
In a glass measuring bowl add milk and vinegar. Wait 5 minutes to curdle. Soak oats in milk.

Meanwhile...

In mixer bowl mix banana, tofu, and egg. Add oil, vanila and applesauce.

In a different bowl, mix together flour, flaxseed meal, baking powder & soda, salt and cinnamon. Blend well with back of fork so that all white chunks are gone.

Add milk/oats mixture to banana mixture in mixer bowl. Mix well. Add dry ingredients and mix until combined.

Fill muffin tin with paper cups and fill with batter. Bake at 350* for 15-20 minutes.
