Pumpkin Muffins

Ingredients
1 3/4 C whole wheat flour3 T sugar2 t baking powder1/2 t cinnamon1/2 t allspice1/4 t baking soda1/8 t salt1 large egg , beaten3/4 C light soy milk (you can use skim milk also)2 T apple sauce3/4 C pumpkin
Directions
Preheat oven to 375 degrees. Oil or spray the muffin pan. In a large bowl, combine dry ingredients. In a smaller bowl, combine egg, milk, and apple sauce. Slowly stir the wet ingredients into the dry until they are well mixed. Add the pumpkin. Bake muffins for 15-18 minutes.

Makes 12 muffins.
