Indian-Style Cauliflower with Sweet Potatoes

Ingredients
1 TBS extra virgin olive oil1 small onion, chopped2 medium scallions, chopped1-1/2 tsp. fresh ginger, minced1 TBS coriander seeds1 TBS cumin seeds1 tsp. turmeric1 tsp. salt1-14.5 oz. can stewed tomatoes1 cup/serving dikon, cubed2 small sweet potatoes, peeled and cubed1 medium head cauliflower, cubed
Directions
Makes 4 servings.

Heat oil in large pan.
Add onions and ginger. Cook until onions translucent.
Stir in all four spices and toast about 15-20 seconds.
Add tomatoes, dikon, & sweet potatoes.
Cook until the potatoes are tender on the firm side, about 13-15 minutes.
Add cauliflower, mix well, cover and cook about 8-10 minutes.
