Guiltless Creamy Pumpkin Mousse Lite

Ingredients

2 small packages of instant sugar-free vanilla pudding2 cups of 1% milk1/2 teaspoon pumpkin spice15 ounce can of pumpkin8 ounces of Lite Cool Whip
Serving Size = makes 16 1-cup servings
Pour COLD milk into large bowl and add pudding mixes
Beat with electric whip 1 minute or until well blended (mixture will be thick)
add pumpkin and pumpkin spice and beat with electric mixer until well blended & smooth (about 5 minutes)
Gently 'fold in' in Cool Whip
Refrigerate 2 hours

I learned of the basic recipe years ago when I was a part of weight Watchers. I lost 100 pounds then but unfortunately I gained some of it back (about 6 years later). For whatever reason, Weight Watchers doesn't work for me anymore. I have had more success watching my caloric intake, hence SparkPeople in my life.
*Additional Tip: My husband likes a little Graham Cracker (or Graham Cracker pie crust) lined on the bottom of the bowl that I serve these in. (The recipe above does not incorporate the graham cracker nutritional information).
