Clean Blueberry Oat Bran Muffins

Oat Bran, .5 cup Egg, fresh, 1 large Egg white, 2 Baking Soda, .25 tspBlueberries, frozen (unsweetened), .5 cup, unthawed Nonfat Dry Milk Powdered, .25 cup Stevia, 1 packet
Preheat oven to 325 degrees.
Place oatbran, dry milk, stevia, and baking soda in a bowl and blend together. Add egg and egg white and whip together. Add blueberries and blend.
Pour mixture into muffin tin and bake for 12 minutes or until fully cooked (pierce muffin with fork until in comes out clean).
Remove from pan onto a plate and let cool.
Serves: 1
(Tip: You can double or triple receipe and freeze muffins for later as well as slice in half and grilled in non stick pan for a toasted muffin)
If you are looking to increase your protein intake, add two more scrambled (cooked) eggwhites with one slice of diced canadian bacon.
